Mientras el precio de la hacienda en el Mercado de Liniers se redujo en los últimos días, los carniceros salieron a reclamar que esa rebaja se traslade a las bocas de expendio, porque esa tendencia declinante no se reflejó en los precios al público, donde inclusive “hay subas”.
El presidente de la Asociación de Propietarios de Carnicerías, Alberto Williams, afirmó a NA que “ojalá baje el precio” en la mercadería que se descarga en los locales.
“Nosotros estamos desesperados por que la carne baje, ya que la gente, con estos precios, no entra a las carnicerías”, lamentó.
Y advirtió: “Si hay una baja en Liniers no la trasladan a nosotros. Está a 200 pesos o más el kilo de la hacienda en pie. Y a nosotros nos venden a 440 pesos el kilo la media res puesta en la carnicería”.
Williams dijo que los carniceros estarán “atentos” esta semana para ver cómo evoluciona el precio de la hacienda en pie y aclaró que el lunes “no es parámetro para medir, porque es un día de escaso movimiento en el mercado concentrador”.
Mientras se espera que el cierre de las exportaciones de carne dispuesto por el Gobierno concluya en los próximos días, continúan las negociaciones con los frigoríficos.
El cese de comercialización de hacienda impulsado por la Comisión de Enlace semanas atrás se sintió en el ente concentrador de Mataderos y en las ferias regionales, donde la inactividad fue casi total.
Con casi un tercio del mes sin comercialización de ganado, la faena de mayo totalizó sólo 964 mil cabezas.
Esto representa un 17 por ciento menos que en igual mes del 2020, pero resulta una faena mucho más alta que lo que se estimaba, que era del orden de las 800 a 850 mil cabezas.
Se acumuló mucha hacienda en los corrales al anunciarse la medida de fuerza, y se faenó especialmente en frigoríficos medianos y pequeños del interior del país.
En lo que hace a novillitos y vaquillonas, en el recinto del barrio de Mataderos se terminó de confirmar la caída de los precios, en comparación con los días previos al paro lanzado por el gremialismo rural.
Las categorías de consumo local cayeron hasta 10 pesos por kilo vivo, en el caso de vacunos de estado regular a bueno.
En estos casos, en hacienda de buena calidad, tanto en machos como hembras livianas, se llegaron a pagar precios máximos que oscilaron entre los 220 y 222 pesos el kilo.
Según un informe elaborado por el Instituto de Promoción de la Carne Vacuna Argentina (Ipcva), el precio en mayo aumentó un 6,1%, suba que sobre todo se percibió en las carnicerías.
En la medición interanual, la entidad calculó que el aumento llegó al 76%.
